Zeytin \u00fcretiminin yo\u011fun oldu\u011fu ba\u015fl\u0131ca \u00fclkeler aras\u0131nda \u0130spanya, \u0130talya, Yunanistan, T\u00fcrkiye, Suriye, Fas, Portekiz, M\u0131s\u0131r ve Cezayir bulunmaktad\u0131r. T\u00fcrkiye, zeytinin ilk kez k\u00fclt\u00fcre al\u0131nd\u0131\u011f\u0131 yer olup, zeytin \u00e7e\u015fitlili\u011fi a\u00e7\u0131s\u0131ndan olduk\u00e7a zengindir. Devlet deste\u011fi ve te\u015fvikleriyle son y\u0131llarda zeytin a\u011fa\u00e7lar\u0131n\u0131n say\u0131s\u0131nda \u00f6nemli art\u0131\u015flar kaydedilmi\u015f ve bu geli\u015fmelerle birlikte T\u00fcrkiye&#8217;nin sofral\u0131k zeytin ve zeytinya\u011f\u0131 \u00fcretiminde d\u00fcnya s\u0131ralamas\u0131nda \u00fcst s\u0131ralara \u00e7\u0131kmas\u0131 beklenmektedir. &#8220;Zeytin genetik kaynaklar\u0131n\u0131n toplanmas\u0131, muhafazas\u0131 ve karakterizasyonu&#8221; projesi kapsam\u0131nda T\u00fcrkiye&#8217;de 94 farkl\u0131 zeytin \u00e7e\u015fidi tescil edilerek, \u0130zmir Zeytincilik Ara\u015ft\u0131rma Enstit\u00fcs\u00fc&#8217;nde Ulusal Gen Bankas\u0131&#8217;nda korunmaktad\u0131r.<\/p>\n<p>Zeytincilik T\u00fcrkiye&#8217;nin Ege, Marmara, Akdeniz, G\u00fcneydo\u011fu Anadolu ve Karadeniz b\u00f6lgelerinde yayg\u0131n olup, 29 ilde zeytin \u00fcretimi yap\u0131lmaktad\u0131r. Zeytinliklerin \u00e7o\u011funlu\u011fu da\u011fl\u0131k ve k\u0131r arazilerinde yer almakta, bunlar\u0131n %85\u2019i sulanmamaktad\u0131r. Sulama yap\u0131lan zeytinliklerde ise sofral\u0131k zeytin \u00fcretimi yayg\u0131nd\u0131r. 2014-2015 y\u0131llar\u0131ndaki verilere g\u00f6re, T\u00fcrkiye\u2019deki zeytin a\u011fa\u00e7lar\u0131n\u0131n b\u00fcy\u00fck k\u0131sm\u0131 Gemlik, Ayval\u0131k, Memecik ve Domat \u00e7e\u015fitlerinden olu\u015fmaktad\u0131r. T\u00fcrkiye, zeytin genetik kaynaklar\u0131 a\u00e7\u0131s\u0131ndan \u00f6nemli bir merkez olup, 2021 y\u0131l\u0131 itibar\u0131yla 100 tescilli zeytin \u00e7e\u015fidi bulunmaktad\u0131r.<\/p>\n<figure id=\"attachment_24\" aria-describedby=\"caption-attachment-24\" style=\"width: 678px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-24 size-mh-magazine-lite-content\" src=\"https:\/\/zeytinkokusu.com\/blog\/wp-content\/uploads\/2024\/12\/Sofralik-zeytin-uretimi-678x347.jpg\" alt=\"\" width=\"678\" height=\"347\" \/><figcaption id=\"caption-attachment-24\" class=\"wp-caption-text\">Sofral\u0131k Zeytin \u00dcretimi<\/figcaption><\/figure>\n<p>Zeytin a\u011fac\u0131n\u0131n yay\u0131lmas\u0131nda s\u0131cakl\u0131k \u00f6nemli bir fakt\u00f6rd\u00fcr. Zeytin yeti\u015ftiricili\u011fi yap\u0131lan b\u00f6lgelerde y\u0131ll\u0131k ortalama s\u0131cakl\u0131klar\u0131n 15-20\u00b0C aras\u0131nda olmas\u0131 tercih edilirken, s\u0131cakl\u0131k 40\u00b0C\u2019ye kadar \u00e7\u0131karsa, sulama yap\u0131lmas\u0131 durumunda zeytin a\u011fac\u0131 bu s\u0131cakl\u0131\u011fa dayanabilir. Ancak a\u015f\u0131r\u0131 y\u00fcksek s\u0131cakl\u0131klar zeytin meyvesi tutumunu olumsuz etkileyebilir ve -7\u00b0C\u2019nin alt\u0131ndaki so\u011fuklar da zarar verebilir. Ayr\u0131ca gece ve g\u00fcnd\u00fcz s\u0131cakl\u0131k farklar\u0131 da s\u00fcrg\u00fcnlerde zararlara yol a\u00e7abilir. R\u00fczgarlar da zeytin a\u011fa\u00e7lar\u0131 \u00fczerinde faydal\u0131 ya da zararl\u0131 etkiler yaratabilir; \u00f6zellikle k\u0131\u015f\u0131n bol ya\u011f\u0131\u015f getiren r\u00fczgarlar \u00e7i\u00e7eklenme d\u00f6nemi i\u00e7in faydal\u0131d\u0131r.<\/p>\n<p>Zeytin a\u011fa\u00e7lar\u0131n\u0131n s\u0131cakl\u0131k ve ya\u011f\u0131\u015f ihtiya\u00e7lar\u0131 da dikkat edilmesi gereken unsurlard\u0131r. \u00c7i\u00e7eklenme i\u00e7in 15-20\u00b0C, meyve b\u00fcy\u00fcmesi i\u00e7in 20-25\u00b0C, olgunla\u015fma ve hasat d\u00f6nemi i\u00e7inse 5\u00b0C gereklidir. Zeytin a\u011fac\u0131n\u0131n y\u0131ll\u0131k ya\u011f\u0131\u015f ihtiyac\u0131 ise 600-800 mm civar\u0131ndad\u0131r. Yaz aylar\u0131nda ya\u011f\u0131\u015f\u0131n yetersiz oldu\u011fu durumlarda sulama gereklidir. K\u00fcresel iklim de\u011fi\u015fikli\u011fi, s\u0131cakl\u0131k art\u0131\u015f\u0131, ya\u011f\u0131\u015f rejimlerindeki de\u011fi\u015fiklik ve a\u015f\u0131r\u0131 hava olaylar\u0131n\u0131n artan s\u0131kl\u0131\u011f\u0131 gibi fakt\u00f6rler, zeytin yeti\u015ftiricili\u011fi \u00fczerinde olumsuz etkiler yaratmaktad\u0131r. T\u00fcrkiye, bu konuda riskli \u00fclkeler aras\u0131nda yer almakta ve iklim de\u011fi\u015fikli\u011fi zeytin yeti\u015ftiricili\u011fini ciddi \u015fekilde etkilemektedir. \u00d6zellikle Ege, Orta Anadolu ve Akdeniz b\u00f6lgelerinde ya\u011f\u0131\u015flar\u0131n azalmas\u0131 ve yaz s\u0131cakl\u0131klar\u0131n\u0131n artmas\u0131, sulama ihtiyac\u0131n\u0131 iki kat\u0131na \u00e7\u0131karabilir ve verim kay\u0131plar\u0131na yol a\u00e7abilir.<\/p>\n<p>Zeytin a\u011fac\u0131 kurakl\u0131\u011fa dayan\u0131kl\u0131 bir bitki olmakla birlikte, k\u00fcresel iklim de\u011fi\u015fikliklerinden en fazla etkilenen tar\u0131msal \u00fcr\u00fcnlerden biridir. Zeytin dikim alanlar\u0131n\u0131n art\u0131\u015f\u0131yla birlikte, iklim de\u011fi\u015fikliklerine kar\u015f\u0131 zeytin yeti\u015ftiricili\u011fini s\u00fcrd\u00fcr\u00fclebilir k\u0131lmak i\u00e7in h\u0131zl\u0131 bir \u015fekilde \u00f6nlemler al\u0131nmas\u0131 gerekmektedir. Bu \u00f6nlemler aras\u0131nda toprak ve su kaynaklar\u0131n\u0131n do\u011fru kullan\u0131m\u0131 ve korunmas\u0131 \u00f6n plana \u00e7\u0131kmaktad\u0131r. Bu derlemede, k\u00fcresel iklim de\u011fi\u015fikli\u011finin T\u00fcrkiye\u2019deki zeytin yeti\u015ftiricili\u011fi ve zeytinya\u011f\u0131 \u00fcretimi \u00fczerindeki potansiyel etkileri detayl\u0131 bir \u015fekilde ele al\u0131nm\u0131\u015ft\u0131r.<\/p>\n<p>\u0130klim de\u011fi\u015fikli\u011finin zeytin yeti\u015ftiricili\u011fi \u00fczerindeki etkileri son y\u0131llarda giderek daha belirgin hale gelmektedir. G\u00fcney Avrupa&#8217;da, \u00f6zellikle Akdeniz havzas\u0131nda kurakl\u0131k, s\u0131cakl\u0131k art\u0131\u015f\u0131 ve ya\u011f\u0131\u015flardaki de\u011fi\u015fiklikler zeytin verimini olumsuz etkilemektedir. \u0130lkbahar ve yaz aylar\u0131ndaki s\u0131cakl\u0131k art\u0131\u015flar\u0131, zeytin a\u011fa\u00e7lar\u0131n\u0131n su ihtiyac\u0131n\u0131 art\u0131r\u0131rken, ya\u011f\u0131\u015f eksiklikleri ve kurakl\u0131k riski de \u00f6nemli bir tehdit olu\u015fturmaktad\u0131r. Bu de\u011fi\u015fiklikler, zeytin yeti\u015ftiricili\u011fi yap\u0131lan alanlarda verim kay\u0131plar\u0131na yol a\u00e7makta ve bu durum gelecekte daha da artmas\u0131 beklenen bir e\u011filim halini alabilir.<\/p>\n<p>\u00d6zellikle Tunus gibi b\u00f6lgelerde, y\u00fckselen s\u0131cakl\u0131klar ve uygun olmayan hasat ile tar\u0131m ekipmanlar\u0131 zeytin \u00fcretimini olumsuz y\u00f6nde etkilemektedir. Bu nedenle, zeytin yeti\u015ftiricili\u011finde suya dayan\u0131kl\u0131 t\u00fcrlerin ve daha az su gereksinimi duyan \u00e7e\u015fitlerin tercih edilmesi gerekti\u011fi vurgulanmaktad\u0131r. Ayr\u0131ca, gelecek 30 y\u0131l i\u00e7erisinde s\u0131cakl\u0131k art\u0131\u015flar\u0131 ve ya\u011f\u0131\u015f azl\u0131\u011f\u0131 nedeniyle zeytin \u00fcretiminde uzun vadeli olumsuz etkiler beklenmektedir. Bu durum, b\u00f6lgesel politikalar\u0131n geli\u015ftirilmesini gerektirmektedir.<\/p>\n<p>\u0130talya&#8217;da yap\u0131lan bir \u00e7al\u0131\u015fmada ise, zeytin \u00fcretimi ile s\u0131cakl\u0131k ve ya\u011f\u0131\u015f aras\u0131ndaki ili\u015fkiler incelenmi\u015f ve s\u0131cakl\u0131k art\u0131\u015flar\u0131 ile ya\u011f\u0131\u015f eksikliklerinin, zeytin \u00fcretimini olumsuz etkiledi\u011fi bulunmu\u015ftur. Akdeniz b\u00f6lgesinde \u00f6zellikle yaz aylar\u0131ndaki kurakl\u0131k ko\u015fullar\u0131n\u0131n art\u0131\u015f\u0131, zeytin \u00fcretiminin azalmas\u0131na neden olaca\u011f\u0131 \u00f6ng\u00f6r\u00fclmektedir. Bu durum, zeytin \u00fcreticileri i\u00e7in b\u00fcy\u00fck bir risk olu\u015fturmakta ve daha \u015fiddetli hava de\u011fi\u015fikliklerinin ya\u015fanmas\u0131yla bu risk daha da artacakt\u0131r.<\/p>\n<p>Zeytin a\u011fa\u00e7lar\u0131n\u0131n suya en hassas oldu\u011fu d\u00f6nemler, \u00e7ekirdeklerin sertle\u015fmeye ba\u015flad\u0131\u011f\u0131 Temmuz-A\u011fustos ile meyvelerin renginin de\u011fi\u015fti\u011fi Eyl\u00fcl-Ekim aylar\u0131d\u0131r. Bu d\u00f6nemde sulama yap\u0131lmas\u0131, verimi art\u0131rmak i\u00e7in \u00f6nemlidir. Ancak d\u00fcnya genelinde zeytinliklerin yakla\u015f\u0131k %85\u2019i sulanmamaktad\u0131r ve \u00fcreticiler \u00e7o\u011funlukla ya\u011f\u0131\u015fa dayal\u0131 sulama yapmaktad\u0131r. T\u00fcrkiye\u2019de de benzer bir durum s\u00f6z konusudur. Bu nedenle, sulama programlar\u0131n\u0131n do\u011fru bir \u015fekilde uygulanmas\u0131 ve suyun verimli kullan\u0131lmas\u0131 gerekmektedir.<\/p>\n<p>Zeytin yeti\u015ftiricili\u011finde sulaman\u0131n etkisi \u00fczerine yap\u0131lan \u00e7al\u0131\u015fmalarda, Memecik zeytini i\u00e7in en uygun sulama stratejisi 5 g\u00fcnde bir yap\u0131lan sulaman\u0131n %25\u2019lik buharla\u015fma oran\u0131na g\u00f6re belirlenmi\u015f sulama program\u0131d\u0131r. Ayr\u0131ca, k\u0131s\u0131tl\u0131 sulama uygulamalar\u0131yla verim art\u0131r\u0131labilece\u011fi belirtilmektedir. \u0130spanya\u2019daki bir \u00e7al\u0131\u015fmada ise, iklim de\u011fi\u015fikli\u011fi senaryolar\u0131na g\u00f6re sulama gereksinimlerinin ve verimlerin optimize edilmesi gerekti\u011fi ifade edilmi\u015ftir. Sim\u00fclasyonlar, sulama stratejilerinin etkili kullan\u0131m\u0131 ile zeytinya\u011f\u0131 verim art\u0131\u015f\u0131 sa\u011flanabilece\u011fini g\u00f6stermi\u015ftir.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-61 size-mh-magazine-lite-content\" src=\"https:\/\/zeytinkokusu.com\/blog\/wp-content\/uploads\/2025\/01\/Turkiye-Zeytin-Dagilimi-678x381.jpg\" alt=\"\" width=\"678\" height=\"381\" \/><\/p>\n<p>Sonu\u00e7 olarak, iklim de\u011fi\u015fikli\u011finin zeytin \u00fcretimi \u00fczerinde yarataca\u011f\u0131 olumsuz etkiler, sulama stratejilerinin geli\u015ftirilmesi, suya dayan\u0131kl\u0131 \u00e7e\u015fitlerin tercih edilmesi ve b\u00f6lgesel iklim ko\u015fullar\u0131na uygun tar\u0131m uygulamalar\u0131 ile en aza indirilebilir. Bu do\u011frultuda, zeytin yeti\u015ftiricili\u011finin daha s\u00fcrd\u00fcr\u00fclebilir hale gelmesi i\u00e7in \u00e7e\u015fitli adaptasyon stratejilerinin hayata ge\u00e7irilmesi \u00f6nemlidir.<\/p>\n<h3><strong>\u0130klim De\u011fi\u015fikli\u011finin Zeytinya\u011f\u0131 Kalitesine Etkileri<\/strong><\/h3>\n<p>Zeytinya\u011f\u0131, Akdeniz havzas\u0131nda \u00fcretilen ve sa\u011fl\u0131k a\u00e7\u0131s\u0131ndan olumlu etkileri olan, \u00f6zellikle kalp damar hastal\u0131klar\u0131 ve kanserlerle ili\u015fkilendirilen bir ya\u011fd\u0131r. \u0130\u00e7eri\u011finde y\u00fcksek oranda oleik asit, d\u00fc\u015f\u00fck oranda linoleik ve palmitik asit bulunur, bu da onu oksidasyona dayan\u0131kl\u0131 ve sa\u011fl\u0131k i\u00e7in faydal\u0131 k\u0131lar. Son y\u0131llarda, zeytinya\u011f\u0131na duyulan ilgi, duyusal \u00f6zellikleri ve sa\u011fl\u0131k yararlar\u0131 nedeniyle giderek artm\u0131\u015ft\u0131r (Effimia Eriotou ve ark., 2021).<\/p>\n<p>T\u00fcrk G\u0131da Kodeksi&#8217;ne g\u00f6re, nat\u00fcrel zeytinya\u011f\u0131, zeytin a\u011fac\u0131n\u0131n meyvesinden, fiziksel ve mekanik i\u015flemlerle elde edilen bir ya\u011fd\u0131r. Zeytinya\u011f\u0131n\u0131n kalitesi, \u00e7e\u015fitli fakt\u00f6rlerden etkilenir: hasat zaman\u0131, meyve olgunlu\u011fu, ekstraksiyon teknolojileri ve ta\u015f\u0131ma ko\u015fullar\u0131 gibi. \u00d6zellikle hasad\u0131n zamanlamas\u0131 ve olgunluk derecesi, ya\u011f\u0131n kalitesini do\u011frudan etkiler. Zeytin, Temmuz ay\u0131 sonu ile A\u011fustos ba\u015f\u0131nda ya\u011f birikimine ba\u015flar, Ekim-Aral\u0131k aylar\u0131 aras\u0131nda ya\u011f i\u00e7eri\u011fi artar. En kaliteli ya\u011f, meyveler pembe-ye\u015fil renkteyken, lezzet a\u00e7\u0131s\u0131ndan yo\u011fun ve ac\u0131 olmal\u0131d\u0131r (Boskou ve ark., 2006).<\/p>\n<p>Zeytin a\u011fa\u00e7lar\u0131 kurakl\u0131\u011fa dayan\u0131kl\u0131 olsa da a\u015f\u0131r\u0131 kurakl\u0131k, meyve tutumu, olgunla\u015fma ve ya\u011f i\u00e7eri\u011fi \u00fczerinde olumsuz etkilere yol a\u00e7ar. Zeytin \u00fcretiminde en kritik d\u00f6nemler, meyve tutumu ve ya\u011f birikimi a\u015famalar\u0131d\u0131r. Zeytinya\u011f\u0131n\u0131n kalitesi, serbest ya\u011f asitli\u011fi, peroksit de\u011feri, UV absorbans de\u011ferleri (K232 ve K270), ya\u011f asidi etil esterleri ve duyusal \u00f6zellikler gibi kriterlerle de\u011ferlendirilir. Bu \u00f6zelliklerin bir\u00e7o\u011fu, iklim ko\u015fullar\u0131na ve zeytin \u00e7e\u015fitlerine ba\u011fl\u0131 olarak de\u011fi\u015fir (Sevim, 2011).<\/p>\n<p>\u0130klim de\u011fi\u015fikli\u011fi, \u00f6zellikle s\u0131cakl\u0131k art\u0131\u015flar\u0131 ve ya\u011f\u0131\u015f rejimindeki de\u011fi\u015fiklikler, zeytinya\u011f\u0131n\u0131n kalitesini olumsuz etkileyebilir. Y\u00fcksek s\u0131cakl\u0131klar, ya\u011f asidi kompozisyonunu de\u011fi\u015ftirir, polifenollerin ve oleik asidin miktar\u0131n\u0131 azaltarak ya\u011f\u0131n kalitesini d\u00fc\u015f\u00fcr\u00fcr. Genotipik farkl\u0131l\u0131klar nedeniyle her zeytin \u00e7e\u015fidi bu de\u011fi\u015fikliklere farkl\u0131 tepki verir. \u00d6rne\u011fin, &#8216;Koroneiki&#8217; \u00e7e\u015fidi y\u00fcksek s\u0131cakl\u0131klardan ciddi \u015fekilde etkilenirken, &#8216;Picholine&#8217; ve &#8216;Coratina&#8217; \u00e7e\u015fitleri, ya\u011f konsantrasyonunu kaybetmeden y\u00fcksek s\u0131cakl\u0131klara kar\u015f\u0131 daha diren\u00e7li olabilir (Nissim ve ark., 2000).<\/p>\n<p>Zeytinya\u011f\u0131n\u0131n ya\u011f asidi kompozisyonu, zeytin \u00e7e\u015fidi, yeti\u015ftirilen b\u00f6lge ve meyvenin olgunluk derecesine g\u00f6re de\u011fi\u015fiklik g\u00f6sterir. So\u011fuk iklimlerde yeti\u015fen zeytinlerden elde edilen ya\u011flar, s\u0131cak iklimlerde yeti\u015fenlere g\u00f6re daha y\u00fcksek oleik asit seviyesine sahip olabilir. Ayr\u0131ca, y\u00fcksek rak\u0131ml\u0131 b\u00f6lgelerden elde edilen zeytinya\u011flar\u0131nda da oleik asit i\u00e7eri\u011fi daha y\u00fcksektir. \u0130klim de\u011fi\u015fikli\u011fi ile ilgili yap\u0131lan \u00e7al\u0131\u015fmalarda, zeytin yeti\u015ftiricili\u011finin iklim de\u011fi\u015fikliklerinden etkilendi\u011fi, \u00f6zellikle zeytinya\u011f\u0131n\u0131n kalitesinin de\u011fi\u015fti\u011fi rapor edilmi\u015ftir (Tupper 2012; Dag ve ark., 2013; Ponti ve ark., 2014).<\/p>\n<p>Sonu\u00e7 olarak, zeytinya\u011f\u0131n\u0131n kalitesini etkileyen en \u00f6nemli fakt\u00f6rler aras\u0131nda iklim ko\u015fullar\u0131, zeytin \u00e7e\u015fitleri, olgunluk derecesi ve hasat zamanlamas\u0131 yer almaktad\u0131r. \u0130klim de\u011fi\u015fikli\u011fi, zeytinya\u011f\u0131 \u00fcretiminin gelece\u011fi a\u00e7\u0131s\u0131ndan b\u00fcy\u00fck bir tehdit olu\u015fturmakta ve \u00fcreticilerin bu de\u011fi\u015fikliklere uyum sa\u011flamak i\u00e7in stratejiler geli\u015ftirmeleri gerekmektedir.<\/p>\n<p>Sulama rejiminin zeytinya\u011f\u0131n\u0131n kalite ve kimyasal bile\u015fimi \u00fczerindeki etkileri olduk\u00e7a \u00f6nemli bir konu.
