Ara\u015ft\u0131rmalar, en iyimser tahminlerde bile bir\u00e7ok zeytin yeti\u015ftirme alan\u0131nda \u00fcretim d\u00fc\u015f\u00fc\u015flerinin ya\u015fanabilece\u011fini ortaya koymaktad\u0131r (Orlandi ve ark., 2020). Akdeniz Havzas\u0131, bu de\u011fi\u015fimlerden ciddi \u015fekilde etkilenme potansiyeline sahiptir (Vasilopoulos, 2013).<\/p>\n<p>Tunus\u2019ta yap\u0131lan bir ara\u015ft\u0131rma, artan s\u0131cakl\u0131klar\u0131n ve uygun olmayan tar\u0131m ekipmanlar\u0131n\u0131n yar\u0131 kurak b\u00f6lgelerde zeytin \u00fcretimini azaltt\u0131\u011f\u0131n\u0131 g\u00f6stermi\u015ftir. \u00d6zellikle G\u00fcney Tunus\u2019ta k\u00fcresel \u0131s\u0131nman\u0131n neden oldu\u011fu \u015fiddetli kurakl\u0131k, dayan\u0131kl\u0131 zeytin a\u011fa\u00e7lar\u0131n\u0131n yeti\u015ftirilmesi gereklili\u011fini g\u00fcndeme getirmi\u015ftir. Ara\u015ft\u0131rmalar, gelecek otuz y\u0131l i\u00e7inde s\u0131cakl\u0131k art\u0131\u015f\u0131 ve ya\u011f\u0131\u015f k\u0131tl\u0131\u011f\u0131 nedeniyle zeytin \u00fcretiminde uzun vadeli de\u011fi\u015fiklikler olaca\u011f\u0131n\u0131 \u00f6ng\u00f6rmektedir (Ben Zaied ve Zouabi, 2016).<\/p>\n<p>\u0130talya\u2019da yap\u0131lan bir \u00e7al\u0131\u015fmada, zeytin \u00fcretiminin polen yo\u011funlu\u011fu \u00f6l\u00e7\u00fcmleri ve \u00e7evresel ko\u015fullar kullan\u0131larak tahmin edilebilece\u011fi belirtilmi\u015ftir. 1999-2012 y\u0131llar\u0131 aras\u0131nda yap\u0131lan analizlerde, yaz aylar\u0131nda artan kurakl\u0131\u011f\u0131n zeytin \u00fcretimi a\u00e7\u0131s\u0131ndan ciddi bir risk olu\u015fturdu\u011fu vurgulanm\u0131\u015ft\u0131r. Ya\u011f\u0131\u015f\u0131n \u00fcretime olumlu etkisi oldu\u011fu g\u00f6r\u00fcl\u00fcrken, s\u0131cakl\u0131k art\u0131\u015flar\u0131n\u0131n olumsuz etkileri dikkat \u00e7ekmektedir (Orlandi ve ark., 2020).<\/p>\n<p>Akdeniz Havzas\u0131, iklim de\u011fi\u015fikli\u011finden en \u00e7ok etkilenen b\u00f6lgelerden biridir. Artan kurakl\u0131k, s\u0131cak hava dalgalar\u0131 ve d\u00fc\u015f\u00fck ya\u011f\u0131\u015f miktarlar\u0131, zeytin a\u011fa\u00e7lar\u0131n\u0131 su stresine sokarak \u00fcretimi tehdit etmektedir. Bu durum, \u00f6zellikle Bat\u0131-Orta Akdeniz ve G\u00fcney Akdeniz k\u0131y\u0131lar\u0131nda daha belirgin hale gelmi\u015ftir. Su stresi, zeytin a\u011fa\u00e7lar\u0131n\u0131n \u00e7i\u00e7eklenme ve meyve tutma s\u00fcre\u00e7lerini olumsuz etkilemektedir (Fraga ve ark., 2021).<\/p>\n<p>Zeytin a\u011fa\u00e7lar\u0131n\u0131n suya en hassas oldu\u011fu d\u00f6nemler, Temmuz sonu ile Ekim ba\u015f\u0131 aras\u0131nda ger\u00e7ekle\u015fen \u00e7ekirdek sertle\u015fmesi ve meyve olgunla\u015fma evreleridir. Bu d\u00f6nemlerde yap\u0131lan sulamalar verim art\u0131\u015f\u0131 sa\u011flamaktad\u0131r. Ancak d\u00fcnya genelinde zeytin yeti\u015ftirilen alanlar\u0131n b\u00fcy\u00fck \u00e7o\u011funlu\u011fu sulamaya dayal\u0131 de\u011fil, ya\u011f\u0131\u015fa ba\u011f\u0131ml\u0131d\u0131r. T\u00fcrkiye\u2019de de durum benzerdir; bu nedenle sulama programlar\u0131n\u0131n do\u011fru planlanmas\u0131 b\u00fcy\u00fck \u00f6nem ta\u015f\u0131maktad\u0131r (A\u015f\u0131k ve ark., 2011).<\/p>\n<p>\u0130spanya\u2019n\u0131n End\u00fcl\u00fcs b\u00f6lgesinde geli\u015ftirilen \u201cAdapta Olive\u201d modeli, gelecekteki iklim ko\u015fullar\u0131nda zeytin \u00fcretimi ve sulama stratejilerini de\u011ferlendirmek i\u00e7in \u00f6nemli bir rehber sunmu\u015ftur. Bu model, tam sulama ve d\u00fczenlenmi\u015f k\u0131s\u0131nt\u0131l\u0131 sulama stratejilerinin, kurakl\u0131k ko\u015fullar\u0131nda \u00fcretim \u00fczerindeki etkilerini incelemi\u015ftir. Ara\u015ft\u0131rma sonu\u00e7lar\u0131, zeytin \u00fcretiminde adaptasyon stratejilerinin \u00f6nemini vurgulamaktad\u0131r (Lorite ve ark., 2018).<\/p>\n<p>\u0130klim de\u011fi\u015fikli\u011finin etkileri sadece bitkisel \u00fcretimle s\u0131n\u0131rl\u0131 kalmamakta, ayn\u0131 zamanda b\u00f6cek \u00e7e\u015fitlili\u011fi ve s\u0131kl\u0131\u011f\u0131 gibi unsurlar \u00fczerinde de etkili olmaktad\u0131r. Artan karbondioksit seviyeleri, bir\u00e7ok ha\u015fere ve zararl\u0131n\u0131n yay\u0131l\u0131m\u0131n\u0131 tetikleyebilir (Moran, 2014).<\/p>\n<p>Sonu\u00e7 olarak, zeytin yeti\u015ftiricili\u011fi a\u00e7\u0131s\u0131ndan iklim de\u011fi\u015fikli\u011fine uygun stratejiler geli\u015ftirilmesi gereklidir. Bu hem tar\u0131msal s\u00fcrd\u00fcr\u00fclebilirlik hem de ekonomik denge a\u00e7\u0131s\u0131ndan b\u00fcy\u00fck \u00f6nem ta\u015f\u0131maktad\u0131r (Kad\u0131o\u011flu ve ark., 2017).<\/p>\n<h3>\u0130klim De\u011fi\u015fikli\u011finin Zeytinya\u011f\u0131 Kalitesine Etkileri<\/h3>\n<p>Zeytinya\u011f\u0131, Akdeniz havzas\u0131nda \u00fcretilen, y\u00fcksek oleik asit i\u00e7eri\u011fi ve d\u00fc\u015f\u00fck linoleik ile palmitik asit oranlar\u0131yla dikkat \u00e7eken bir yemeklik ya\u011fd\u0131r. Bu ya\u011f, Akdeniz \u00fclkelerinin beslenme al\u0131\u015fkanl\u0131klar\u0131nda, ekonomilerinde ve k\u00fclt\u00fcrlerinde \u00f6nemli bir yere sahiptir. Ayn\u0131 zamanda, d\u00fc\u015f\u00fck kalp-damar hastal\u0131\u011f\u0131 riski, kanser \u00f6nleme etkileri ve uzun \u00f6m\u00fcr gibi sa\u011fl\u0131k faydalar\u0131 ile ili\u015fkilendirilir (Effimia Eriotou ve ark., 2021). Zeytinya\u011f\u0131n\u0131n benzersiz aroma ve lezzet profili, y\u00fcksek oksidatif stabilitesi ve sa\u011fl\u0131k \u00fczerindeki olumlu etkileri, son y\u0131llarda bu \u00fcr\u00fcne olan ilgiyi daha da art\u0131rm\u0131\u015ft\u0131r (Dabbou ve ark., 2011; K\u00f6seo\u011flu ve ark., 2018; Cairone ve ark., 2021).<\/p>\n<p>T\u00fcrk G\u0131da Kodeksi Zeytinya\u011f\u0131 ve Pirina Ya\u011f\u0131 Tebli\u011fi&#8217;nde nat\u00fcrel zeytinya\u011f\u0131, zeytin a\u011fac\u0131 meyvesinden do\u011fal niteliklerini de\u011fi\u015ftirmeyecek bir \u015fekilde, yaln\u0131zca mekanik ve fiziksel i\u015flemlerle elde edilen, kendi kategorisindeki fiziksel, kimyasal ve duyusal \u00f6zelliklere sahip bir \u00fcr\u00fcn olarak tan\u0131mlanm\u0131\u015ft\u0131r (TGK, 2017). Ancak zeytinya\u011f\u0131n\u0131n kalitesi; tar\u0131msal uygulamalar, mevsim ko\u015fullar\u0131, meyve hijyeni, olgunluk seviyesi, hasat zamanlar\u0131 ve \u015fekilleri, ta\u015f\u0131ma y\u00f6ntemleri ile ekstraksiyon teknolojilerinden do\u011frudan etkilenmektedir (B\u0131y\u0131kl\u0131, 2009). Kalite \u00fczerinde en b\u00fcy\u00fck etkiye sahip fakt\u00f6rler aras\u0131nda hasat zaman\u0131 ve olgunluk seviyesi (%30), ekstraksiyon teknolojileri (%30), zeytin \u00e7e\u015fidi (%20), depolama ko\u015fullar\u0131 (%10), hasat y\u00f6ntemleri (%5) ve ta\u015f\u0131ma y\u00f6ntemleri (%5) bulunmaktad\u0131r (Sevim, 2011).<\/p>\n<p>Zeytin meyvesinde ya\u011f birikimi, Temmuz sonu ile A\u011fustos ba\u015f\u0131 aras\u0131nda ba\u015flar. Bu d\u00f6nemde s\u0131cakl\u0131klar\u0131n d\u00fc\u015fmesiyle birlikte zeytin olgunla\u015fmaya ba\u015flar ve ya\u011f i\u00e7eri\u011fi art\u0131\u015f g\u00f6sterir. \u00d6zellikle Ekim ile Aral\u0131k aylar\u0131 aras\u0131nda ya\u011f miktar\u0131 \u00f6nemli \u00f6l\u00e7\u00fcde artar. Sonbahar ve k\u0131\u015f aylar\u0131nda zeytin meyvesi siyahla\u015f\u0131rken, ya\u011f i\u00e7eri\u011fi maksimum seviyeye ula\u015f\u0131r (Boskou ve ark., 2006). Ancak kaliteli zeytinya\u011f\u0131 \u00fcretimi i\u00e7in ideal hasat d\u00f6nemi, genellikle ya\u011f\u0131n en iyi kalite ve duyusal \u00f6zelliklere ula\u015ft\u0131\u011f\u0131 d\u00f6nemden farkl\u0131 bir zamana denk gelir. Bu nedenle, nat\u00fcrel s\u0131zma zeytinya\u011f\u0131 \u00fcretimi i\u00e7in zeytinlerin ideal olgunluk a\u015famas\u0131nda, yani pembemsi-ye\u015fil d\u00f6nemde hasat edilmesi \u00f6nerilir. Su stresi, zeytin a\u011fa\u00e7lar\u0131nda meyve tutumu, olgunla\u015fma ve ya\u011f i\u00e7eri\u011fi \u00fczerinde \u00f6nemli de\u011fi\u015fikliklere yol a\u00e7ar. Ya\u011fl\u0131k zeytin \u00fcretiminde, su stresinin en kritik etkileri meyve tutumu ve ya\u011f birikimi a\u015famalar\u0131nda g\u00f6r\u00fcl\u00fcrken, sofral\u0131k zeytinlerde meyve geli\u015fiminin erken (h\u00fccre b\u00f6l\u00fcnmesi) ve ge\u00e7 (h\u00fccre geni\u015flemesi) evreleri de kritik d\u00f6nemlerdir (Varol ve Ayaz, 2012).<\/p>\n<p>Zeytinya\u011f\u0131 kalitesi, serbest ya\u011f asitli\u011fi, peroksit de\u011feri, UV&#8217;de \u00f6zg\u00fcl absorbans de\u011ferleri (K232 ve K270), ya\u011f asidi etil esterleri ve duyusal \u00f6zellikler gibi \u00e7e\u015fitli kriterlerle de\u011ferlendirilir. Serbest ya\u011f asitli\u011fi, \u00f6zellikle zeytinya\u011f\u0131 ticaretinde en \u00f6nemli kalite \u00f6l\u00e7\u00fct\u00fc olarak kabul edilir. T\u00fcrk G\u0131da Kodeksi&#8217;ne (TGK, 2017) g\u00f6re, zeytinya\u011f\u0131 s\u0131n\u0131fland\u0131rmas\u0131 \u015fu \u015fekildedir:<\/p>\n<ul>\n<li><strong>Nat\u00fcrel s\u0131zma zeytinya\u011f\u0131<\/strong>: Serbest ya\u011f asitli\u011fi %0,8&#8217;den az (% oleik asit cinsinden),<\/li>\n<li><strong>Nat\u00fcrel birinci zeytinya\u011f\u0131<\/strong>: Serbest ya\u011f asitli\u011fi %2,0&#8217;den fazla olmayan,<\/li>\n<li><strong>Ham\/rafinajl\u0131k zeytinya\u011f\u0131<\/strong>: Serbest ya\u011f asitli\u011fi %2,0&#8217;den fazla olan, do\u011frudan t\u00fcketime uygun olmayan ya\u011flar.<\/li>\n<\/ul>\n<h3>\u0130klim De\u011fi\u015fikli\u011finin Kalite ve Bile\u015fim \u00dczerindeki Etkileri<\/h3>\n<p>Zeytinya\u011f\u0131, yakla\u015f\u0131k %98 oran\u0131nda sabunla\u015fabilen (trigliseridler, ya\u011f asidi esterleri) ve %2 oran\u0131nda sabunla\u015fmayan (fenolik bile\u015fikler, serbest ya\u011f asitleri, steroller, u\u00e7ucu bile\u015fenler) maddelerden olu\u015fur. Bu bile\u015fimin zeytin \u00e7e\u015fidine, iklim ko\u015fullar\u0131na (s\u0131cakl\u0131k ve ya\u011f\u0131\u015f), tar\u0131m uygulamalar\u0131na (g\u00fcbreleme, sulama) ve \u00fcretim s\u00fcre\u00e7lerine ba\u011fl\u0131 olarak de\u011fi\u015fti\u011fi g\u00f6zlenmi\u015ftir (\u0130lyaso\u011flu, 2009).<\/p>\n<p>Ara\u015ft\u0131rmalar, iklim de\u011fi\u015fikli\u011finin zeytin yeti\u015ftiricili\u011fini ve zeytinya\u011f\u0131 kalitesini do\u011frudan etkiledi\u011fini g\u00f6stermektedir (Tupper, 2012; Dag ve ark., 2013; Ponti ve ark., 2014). \u00d6zellikle s\u0131cakl\u0131k art\u0131\u015flar\u0131n\u0131n ya\u011f asidi kompozisyonunu de\u011fi\u015ftirerek oleik asit ve polifenol seviyelerini d\u00fc\u015f\u00fcrd\u00fc\u011f\u00fc, dolay\u0131s\u0131yla ya\u011f\u0131n oksidatif stabilitesini ve duyusal \u00f6zelliklerini olumsuz etkiledi\u011fi belirtilmi\u015ftir (Giovacchino ve ark., 2002; Mousavi ve ark., 2021). Y\u00fcksek s\u0131cakl\u0131klar, oleik asit oran\u0131n\u0131 d\u00fc\u015f\u00fcr\u00fcp, palmitik ve linoleik asit oranlar\u0131n\u0131 art\u0131rarak ya\u011f\u0131n kalitesini d\u00fc\u015f\u00fcrmektedir. Bununla birlikte, s\u0131cakl\u0131k etkilerinin genotipe ba\u011fl\u0131 oldu\u011fu, her zeytin \u00e7e\u015fidinin farkl\u0131 tepkiler verdi\u011fi rapor edilmi\u015ftir. \u00d6rne\u011fin, \u2018Koroneiki\u2019, \u2018Picholine\u2019 ve \u2018Coratina\u2019 gibi \u00e7e\u015fitler, y\u00fcksek s\u0131cakl\u0131k ko\u015fullar\u0131nda kalite parametrelerinde olumsuz etkiler g\u00f6stermi\u015ftir (Nissim ve ark., 2000).<\/p>\n<h3>Kritik D\u00f6nemler ve B\u00f6lgesel Etkiler<\/h3>\n<p>Zeytinya\u011f\u0131 kalitesinde olgunla\u015fma seviyesi ve yeti\u015ftirildi\u011fi co\u011frafi ko\u015fullar b\u00fcy\u00fck rol oynar. Y\u00fcksek rak\u0131mlarda yeti\u015ftirilen zeytinlerden elde edilen ya\u011flar genellikle daha y\u00fcksek oleik asit oran\u0131na, d\u00fc\u015f\u00fck linoleik ve palmitik asit oran\u0131na sahiptir. Benzer \u015fekilde, so\u011fuk iklimlerde yeti\u015fen zeytinlerden elde edilen ya\u011flarda oleik asit oran\u0131 s\u0131cak b\u00f6lgelerden elde edilenlere g\u00f6re daha y\u00fcksek bulunmu\u015ftur (Bozdo\u011fan Konu\u015fkan, 2008).<\/p>\n<p>Y\u00fcksek s\u0131cakl\u0131klar\u0131n en fazla etkiledi\u011fi d\u00f6nem, meyvede \u00e7ekirdek sertle\u015fmesinden renk de\u011fi\u015fiminin ba\u015flang\u0131c\u0131na kadar olan s\u00fcre\u00e7tir (genelde Temmuz-A\u011fustos). Sulanan a\u011fa\u00e7lardan elde edilen zeytinya\u011flar\u0131nda, meyve yap\u0131s\u0131n\u0131n sofral\u0131k zeytin \u00fcretimi ve ya\u011f ekstraksiyonu i\u00e7in daha elveri\u015fli oldu\u011fu belirlenmi\u015ftir.
