T\u00fcketiciler, m\u00fcmk\u00fcn olan en do\u011fal \u015fartlarda ve y\u00fcksek kalite standartlar\u0131nda \u00fcretilen g\u0131dalara y\u00f6nelmektedir. Bu \u00e7er\u00e7evede, zeytin ve zeytinya\u011f\u0131 \u00f6nemli bir pazar pay\u0131na sahip olup dikkat \u00e7ekmektedir. Zeytinya\u011f\u0131, sa\u011fl\u0131k ve lezzeti birle\u015ftiren, ya\u011fda \u00e7\u00f6z\u00fcn\u00fcr E vitamini kayna\u011f\u0131 olmas\u0131 ve y\u00fcksek kalorili yap\u0131s\u0131 ile e\u015fsiz bir ya\u011fd\u0131r. Ayn\u0131 zamanda, meyve suyu gibi do\u011fal t\u00fcketilebilen tek ya\u011f olma \u00f6zelli\u011fini ta\u015f\u0131r. Bu \u00e7al\u0131\u015fman\u0131n amac\u0131, zeytin ve zeytinya\u011f\u0131n\u0131n ge\u00e7mi\u015finden s\u00f6z ederek insan sa\u011fl\u0131\u011f\u0131ndaki kritik rol\u00fcn\u00fc g\u00f6zler \u00f6n\u00fcne sermektir.<\/p>\n<p><strong>\u00fcrkiye&#8217;de Zeytinya\u011f\u0131 ve Zeytincilik Sekt\u00f6r\u00fc<\/strong><\/p>\n<p>Zeytinya\u011f\u0131 sekt\u00f6r\u00fc, sa\u011fl\u0131k ve lezzeti bir araya getiren bir de\u011fer olarak yaln\u0131zca mutfaklarda de\u011fil, tar\u0131m ekonomisinde de \u00f6nemli bir yer edinmi\u015ftir. Son y\u0131llarda yap\u0131lan yat\u0131r\u0131mlar, sekt\u00f6rdeki yenilenme ve geli\u015fim \u00e7abalar\u0131n\u0131 h\u0131zland\u0131rm\u0131\u015f, kaliteli \u00fcretim konusunda ilerleme sa\u011flanmas\u0131na katk\u0131da bulunmu\u015ftur (Se\u00e7er ve Emeksiz, 2012).<\/p>\n<p><strong>Modern Zeytincilik ve Yeni Bah\u00e7eler<\/strong><br \/>\nT\u00fcrkiye\u2019de mevcut zeytin a\u011fa\u00e7lar\u0131n\u0131n %80\u2019i \u00e7ok ya\u015fl\u0131 oldu\u011fundan, modern zeytincilik tekniklerinin benimsenmesi ve yo\u011fun a\u011fa\u00e7 dikimine dayal\u0131 yeni bah\u00e7elerin olu\u015fturulmas\u0131 gereklidir. Bu s\u00fcre\u00e7te, seleksiyon y\u00f6ntemiyle elde edilen tescilli \u00e7e\u015fitlerin kullan\u0131lmas\u0131, \u00fcretimde kaliteyi art\u0131racakt\u0131r (\u00d6zkaya, 2003).<\/p>\n<p><strong>Zeytinya\u011f\u0131n\u0131n \u0130nsan Sa\u011fl\u0131\u011f\u0131na Katk\u0131lar\u0131<\/strong><br \/>\nZeytinya\u011f\u0131, ya\u015fam\u0131n her d\u00f6neminde insan sa\u011fl\u0131\u011f\u0131na say\u0131s\u0131z fayda sa\u011flamaktad\u0131r. \u201cS\u0131v\u0131 alt\u0131n\u201d olarak an\u0131lan bu de\u011ferli ya\u011f, y\u00fcksek tansiyondan kolesterole, romatizmadan cilt hastal\u0131klar\u0131na kadar pek \u00e7ok sa\u011fl\u0131k sorununda geleneksel tedavi unsuru olarak kullan\u0131lm\u0131\u015ft\u0131r (Tunal\u0131o\u011flu ve ark., 2003).<\/p>\n<p><strong>Zeytin ve Tarihsel \u00d6nemi<\/strong><br \/>\nZeytin, Oleaceae ailesinden gelen ve k\u00f6keni Yunanca <em>elaia<\/em> ile Latince <em>olea<\/em> terimlerine dayanan bir bitkidir. Zeytin a\u011fac\u0131, uzun \u00f6mr\u00fc ve dayan\u0131kl\u0131l\u0131\u011f\u0131 ile mitolojide \u201c\u00f6l\u00fcms\u00fcz a\u011fa\u00e7\u201d olarak an\u0131lm\u0131\u015ft\u0131r. T\u00fcrkiye\u2019de Ayd\u0131n, \u0130zmir, Mu\u011fla, Bal\u0131kesir ve Manisa, zeytin a\u011fa\u00e7lar\u0131n\u0131n en yo\u011fun bulundu\u011fu illerdir (Karahocagil ve ark., 2003).<\/p>\n<p><strong>Naturel Zeytinya\u011f\u0131 ve Kalite Fakt\u00f6rleri<\/strong><br \/>\nNaturel zeytinya\u011f\u0131, yaln\u0131zca fiziksel i\u015flemlerle, kimyasal yap\u0131s\u0131na zarar vermeden \u00fcretilen ve g\u0131da olarak t\u00fcketilebilen bir ya\u011fd\u0131r. Kalitesini belirleyen temel unsurlar; zeytinin \u00e7e\u015fidi, olgunluk derecesi, toprak ve iklim ko\u015fullar\u0131, hasat y\u00f6ntemi, \u00e7\u0131karma sistemi ve muhafaza \u015feklidir. Fiziksel, kimyasal ve duyusal analizler bu ya\u011f\u0131n kalite s\u0131n\u0131fland\u0131rmas\u0131nda \u00f6nemli rol oynar (Bozdo\u011fan ve ark., 2003).<\/p>\n<p><strong>Zeytinya\u011f\u0131 Sekt\u00f6r\u00fcn\u00fcn Ekonomik \u00d6nemi<\/strong><br \/>\nZeytin ve zeytinya\u011f\u0131 sekt\u00f6r\u00fc, tar\u0131msal ekonomiye olan katk\u0131s\u0131, istihdam sa\u011flama potansiyeli ve ihracattaki rol\u00fc ile \u00fclkemizin \u00f6nemli bir de\u011feridir. \u00d6zellikle sofral\u0131k zeytin ve zeytinya\u011f\u0131, hem tar\u0131ma dayal\u0131 sanayi kollar\u0131n\u0131 desteklemekte hem de \u00f6nemli bir katma de\u011fer yaratmaktad\u0131r (Nizip Zeytinya\u011f\u0131 Sekt\u00f6r Analizi Raporu, 2014).<img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-49 size-full\" src=\"https:\/\/zeytinkokusu.com\/blog\/wp-content\/uploads\/2024\/12\/zeytin.webp\" alt=\"\" width=\"624\" height=\"469\" srcset=\"https:\/\/zeytinkokusu.com\/blog\/wp-content\/uploads\/2024\/12\/zeytin.webp 624w, https:\/\/zeytinkokusu.com\/blog\/wp-content\/uploads\/2024\/12\/zeytin-300x225.webp 300w, https:\/\/zeytinkokusu.com\/blog\/wp-content\/uploads\/2024\/12\/zeytin-326x245.webp 326w, https:\/\/zeytinkokusu.com\/blog\/wp-content\/uploads\/2024\/12\/zeytin-80x60.webp 80w\" sizes=\"auto, (max-width: 624px) 100vw, 624px\" \/><\/p>\n<p>**Akdeniz mutfa\u011f\u0131nda \u00f6ne \u00e7\u0131kan bir modelde, major antioksidan i\u015flevine sahip bile\u015fenlerin zeytinya\u011f\u0131, sebze ve meyvelerde bulunmas\u0131 dikkat \u00e7ekicidir. Bu bile\u015fenler, zeytinya\u011f\u0131n\u0131n faydal\u0131 i\u00e7erikleri olarak alfa-tokoferol, karoten ve polifenoller \u015feklinde adland\u0131r\u0131l\u0131r. Bu maddeler, oksidasyonu \u00f6nleyerek serbest radikallerin olu\u015fumunu engeller ve b\u00f6ylece kalp-damar hastal\u0131klar\u0131 riskini azalt\u0131r (Tunal\u0131o\u011flu ve ark., 2003).**<\/p>\n<p>**Zeytinin ya\u011fa d\u00f6n\u00fc\u015f\u00fcm s\u00fcreci k\u0131saca \u015fu \u015fekilde \u00f6zetlenebilir: Zeytin ezilip macun haline getirilir. S\u0131cak su ile yumu\u015fat\u0131lan h\u00fccre duvarlar\u0131 bir pres yard\u0131m\u0131yla par\u00e7alan\u0131r ve ya\u011f ile su posas\u0131ndan ayr\u0131l\u0131r. Ard\u0131ndan suyun ya\u011fdan uzakla\u015ft\u0131r\u0131lmas\u0131yla nat\u00fcrel zeytinya\u011f\u0131 elde edilir. Bu ya\u011flar, asitlik derecesine g\u00f6re farkl\u0131 gruplarda s\u0131n\u0131fland\u0131r\u0131l\u0131r (Gen\u00e7, 2004).**<\/p>\n<p>**Akdeniz ikliminde en uygun yeti\u015ftirme ko\u015fullar\u0131n\u0131 bulan zeytin, Akdeniz uygarl\u0131klar\u0131n\u0131n vazge\u00e7ilmez bir par\u00e7as\u0131d\u0131r. Oleaceae familyas\u0131ndan, Olea cinsinin bir alt t\u00fcr\u00fc olan zeytinin gen merkezinin G\u00fcneydo\u011fu Anadolu\u2019da Hatay, Kahramanmara\u015f ve Mardin \u00fc\u00e7geninde oldu\u011fu ve buradan d\u00fcnyaya yay\u0131ld\u0131\u011f\u0131 d\u00fc\u015f\u00fcn\u00fclmektedir (Karakuyu ve ark., 2011). T\u00fcrkiye, co\u011frafi konumu ve Akdeniz iklimi sayesinde \u0130talya, \u0130spanya, Yunanistan ve Tunus gibi \u00fclkelerle birlikte d\u00fcnya zeytin ve zeytinya\u011f\u0131 \u00fcretiminde \u00f6nemli bir yere sahiptir. T\u00fcrkiye\u2019de zeytin \u00fcretimi daha \u00e7ok Ege ve Marmara b\u00f6lgelerinde yo\u011funla\u015fm\u0131\u015ft\u0131r. Ayd\u0131n, \u0130zmir, Mu\u011fla, Bal\u0131kesir, Manisa ve \u00c7anakkale ba\u015fl\u0131ca \u00fcretim yap\u0131lan illerdir. T\u00fcrkiye \u0130statistik Kurumu\u2019nun 2011 y\u0131l\u0131 verilerine g\u00f6re, T\u00fcrkiye\u2019de zeytin \u00fcretim alan\u0131 798.493 hektard\u0131r; bu, toplam tar\u0131m alanlar\u0131n\u0131n %2,3\u2019\u00fcn\u00fc ve ba\u011f-bah\u00e7e alanlar\u0131n\u0131n %22\u2019sini olu\u015fturmaktad\u0131r (Nizip Zeytinya\u011f\u0131 Sekt\u00f6r Analizi Raporu, 2014). T\u00fcrkiye\u2019de zeytin a\u011fac\u0131 varl\u0131\u011f\u0131 ve \u00fcretim a\u00e7\u0131s\u0131ndan b\u00f6lgeler s\u0131ras\u0131yla Ege (%75), Akdeniz (%14) ve Marmara (%10) \u015feklinde s\u0131ralan\u0131r (Karakuyu ve ark., 2011). T\u00fcrkiye, sofral\u0131k zeytin \u00fcretiminde d\u00fcnyada \u00fc\u00e7\u00fcnc\u00fc, zeytinya\u011f\u0131 \u00fcretiminde ise alt\u0131nc\u0131 s\u0131radad\u0131r (Kaya ve Kurucu, 2011).**<\/p>\n<p>**Zeytinya\u011f\u0131n\u0131n kullan\u0131m alanlar\u0131 geni\u015ftir. Kendine \u00f6zg\u00fc lezzeti ve sa\u011fl\u0131k \u00fczerindeki olumlu etkileri, zeytinya\u011f\u0131n\u0131 di\u011fer bitkisel ya\u011flardan ay\u0131r\u0131r. Fenolik bile\u015fenler a\u00e7\u0131s\u0131ndan zengin olmas\u0131 ve g\u00fc\u00e7l\u00fc antioksidan \u00f6zellikler ta\u015f\u0131mas\u0131, zeytinya\u011f\u0131n\u0131 tercih sebebi yapar (\u015eaml\u0131 ve ark., 2011). T\u00fcrk mutfa\u011f\u0131nda zeytin ve zeytinya\u011f\u0131 \u00f6nemli bir yere sahiptir. Ramazan ay\u0131nda iftar sofralar\u0131n\u0131n vazge\u00e7ilmezi olan zeytin, T\u00fcrk kahvalt\u0131lar\u0131n\u0131n da olmazsa olmaz\u0131d\u0131r (Giritlio\u011flu, 2008).**<\/p>\n<p>**Zeytinya\u011f\u0131n\u0131n bile\u015fimi; zeytin \u00e7e\u015fidi, iklim ko\u015fullar\u0131 ve olgunla\u015fma derecesine ba\u011fl\u0131 olarak de\u011fi\u015fir (G\u00fcm\u00fc\u015fkesen ve ark., 2003). Tarih boyunca zeytinya\u011f\u0131, mabetlerin kutsanmas\u0131nda, sa\u00e7 ve cilt bak\u0131m\u0131nda, sporcular\u0131n kaslar\u0131n\u0131 esnek tutmas\u0131nda ve mutfakta \u00f6nemli roller \u00fcstlenmi\u015ftir (Ba\u015fo\u011flu, 2009). Zeytinya\u011f\u0131, kolay sindirilebilir, mide dostu bir ya\u011fd\u0131r ve y\u00fcksek yanma derecesiyle k\u0131zartma i\u00e7in idealdir (Ak\u00e7i\u00e7ek ve \u00d6tle\u015f, 2011). Ayn\u0131 zamanda temizlik ve g\u00fczellik i\u00e7in de kullan\u0131lm\u0131\u015ft\u0131r.**<\/p>\n<p><strong>Zeytinya\u011f\u0131n\u0131n Sa\u011fl\u0131k \u00dczerindeki Etkileri ve Kozmetik Kullan\u0131m\u0131<\/strong><\/p>\n<p>Zeytinya\u011f\u0131, sabun yap\u0131m\u0131nda yayg\u0131n olarak kullan\u0131lan bir hammaddedir. Kozmetik alan\u0131nda faydalar\u0131 binlerce y\u0131l \u00f6ncesine dayanmakta olup, g\u00fcn\u00fcm\u00fczde \u015fampuanlardan kremlere kadar pek \u00e7ok \u00fcr\u00fcn\u00fcn i\u00e7eri\u011finde yer almaktad\u0131r. Sa\u00e7lar\u0131 yumu\u015fak ve parlak hale getirme \u00f6zelli\u011fiyle bilinir. Di\u011fer bir\u00e7ok ya\u011f alerjik reaksiyonlara sebep olabilirken, do\u011fal ve kimyasal i\u015flem g\u00f6rmemi\u015f zeytinya\u011f\u0131 \u00fcr\u00fcnlerinde bu t\u00fcr reaksiyonlara nadiren rastlanmaktad\u0131r (Ak\u00e7i\u00e7ek ve \u00d6tle\u015f, 2011).<\/p>\n<p><strong>Zeytinya\u011f\u0131n\u0131n Terap\u00f6tik Etkileri<\/strong><br \/>\nZeytinya\u011f\u0131n\u0131n biyolojik aktif bile\u015fenleri ve terap\u00f6tik etkileri, bilimsel \u00e7al\u0131\u015fmalarla daha detayl\u0131 \u015fekilde ara\u015ft\u0131r\u0131lmaktad\u0131r (Armutcu ve ark., 2013). Zeytinya\u011f\u0131, di\u011fer bitkisel ya\u011flardan farkl\u0131 olarak tamamen do\u011fal yollarla meyveden elde edilmekte ve kimyasal i\u015flemlerden ge\u00e7meden t\u00fcketilebilmektedir (Kara ve ark., 2011). Kronik hastal\u0131klar ve kanser gibi sa\u011fl\u0131k sorunlar\u0131nda, diyetlerde zeytinya\u011f\u0131 kullan\u0131m\u0131n\u0131n \u00f6nemi giderek daha fazla vurgulanmaktad\u0131r (Armutcu ve ark., 2013).<\/p>\n<p>Sa\u011fl\u0131k bilincine sahip bireyler, zeytinya\u011f\u0131 gibi sa\u011fl\u0131kl\u0131 g\u0131dalara ula\u015fmak i\u00e7in hem zaman hem de b\u00fct\u00e7e ay\u0131rmaktad\u0131r. Son y\u0131llarda artan bilin\u00e7lenme, d\u00fcnya genelinde zeytinya\u011f\u0131na olan talebin y\u00fckselmesine neden olmu\u015ftur. Akdeniz diyetinin temel ta\u015flar\u0131ndan biri olan zeytinya\u011f\u0131, insan sa\u011fl\u0131\u011f\u0131na sundu\u011fu olumlu etkilerle dikkat \u00e7ekmektedir.<\/p>\n<p><strong>Zeytinya\u011f\u0131n\u0131n Besin De\u011feri ve Kullan\u0131m\u0131<\/strong><br \/>\nZeytinya\u011f\u0131, y\u00fcksek kalori ve sindirilebilirlik oran\u0131yla \u00f6ne \u00e7\u0131kmaktad\u0131r. Uzmanlar, g\u00fcnl\u00fck t\u00fcketilen ya\u011flar\u0131n %30-35\u2019inin zeytinya\u011f\u0131 gibi sa\u011fl\u0131kl\u0131 ya\u011flardan kar\u015f\u0131lanmas\u0131n\u0131 \u00f6nermektedir (Demirci ve B\u00f6l\u00fckba\u015f\u0131, 2003).<\/p>\n<p>Zeytinya\u011f\u0131, antioksidanlar ve y\u00fcksek tekli doymam\u0131\u015f ya\u011f asitleri i\u00e7eri\u011fiyle damar sa\u011fl\u0131\u011f\u0131n\u0131 korumada \u00f6nemli bir rol oynar (Tunal\u0131o\u011flu ve ark., 2003). \u00d6zellikle oleik asit i\u00e7eri\u011fi ve fenolik bile\u015fenler sayesinde kalp-damar hastal\u0131klar\u0131 riskini azaltmada etkili oldu\u011fu belirtilmektedir.<\/p>\n<p><strong>Zeytinin Besin De\u011feri<\/strong><br \/>\nZeytin, yaln\u0131zca lezzetli bir besin de\u011fil, ayn\u0131 zamanda y\u00fcksek kalorisi, \u015feker oran\u0131, bitkisel proteini ve vitamin i\u00e7eri\u011fiyle temel bir g\u0131da maddesidir. Nat\u00fcrel zeytinya\u011f\u0131, hem s\u0131cak hem de so\u011fuk t\u00fcketildi\u011finde mide asidini dengeleyerek gastrit ve \u00fclser gibi rahats\u0131zl\u0131klara kar\u015f\u0131 koruyucu bir etki sa\u011flamaktad\u0131r. Ayr\u0131ca kemik ve di\u015flerin geli\u015fimine katk\u0131da bulunur, h\u00fccrelerin ve dokular\u0131n yenilenmesini destekler ve ya\u015flanmay\u0131 geciktirici \u00f6zellikler ta\u015f\u0131r (Alt\u0131nta\u015f \u00d6zdemir ve \u00d6zdemir, 2011).<\/p>\n<p><strong>Zeytinya\u011f\u0131n\u0131n Tarih\u00e7esi ve \u00d6nemi<\/strong><br \/>\nZeytinya\u011f\u0131, yakla\u015f\u0131k 8 bin y\u0131l \u00f6ncesine uzanan k\u00f6kl\u00fc bir ge\u00e7mi\u015fe sahiptir ve Akdeniz mutfa\u011f\u0131n\u0131n vazge\u00e7ilmez bir par\u00e7as\u0131 olarak bilinmektedir (K\u00f6yl\u00fco\u011flu ve \u00d6zkan, 2012).
